Chorizo, Butternut Squash and Pea Risotto with Crispy Sage, Paprika Hazelnuts and Crushed Amaretti

Everyone loves risotto and butternut squash and chorizo is a classic combination. However, with the little twists I have made to my recipe, this is a risotto with a difference. The crispy sage, paprika hazelnuts and amaretti all add texture and more layers of flavour. The crushed amaretti biscuit on top is a classic Italian addition which I personally love. The little hint of sweetness works so well with the squash, while the saltiness from the parmesan and spice from the nuts and chorizo balances everything out.

Marinated Chicken Kebabs, Baked Sesame Feta with Thyme Honey, Za’atar Flatbreads, Smoky Baba Ganoush and Herby Bulgur Wheat

This is a collection of some of my most favourite flavours and on these cold, January nights we all need a bit of sunshine. The baked sesame feta with thyme honey is a real showstopper and incredibly moreish, while the marinated chicken thighs are so tasty and moist. Follow my recipes to make your own mezze feast - there really is something for everyone.

Herb Crusted Beef Tenderloin with Horseradish Cauliflower Puree, Fondant Potatoes, Parsnip Crisps and Red Wine and Chocolate Jus

This is a decadent Sunday night roast. Its rich and full of flavour and definitely a treat. We were gifted the chateaubriand a few months ago and it has been in our freezer ever since. I was going to do a beef wellington with it, but decided that a fancy Sunday roast would be a nice luxury instead. The accompaniments would work with any other piece of beef, they would also be great with venison too. The cauliflower puree pulls everything together and is a definite must-try.

Seared Sesame Tuna with Pea, Avocado and Wasabi Mash, Pickled Ginger and Crispy Shallots

With this recipe I tried to recreate all my favourite flavours of a tuna and avocado sushi roll but in a slightly more refined, elegant dish. This made a lovely light main course but it would also make a great starter for a dinner party in smaller portions. The marinade for the steaks is sooooo tasty - salty, sweet, spicy, sour and sharp all at the same time with lots of deep umami flavours. The pea, avocado and wasabi mash works so well with the tuna, giving a background heat to the whole dish. With some crispy shallots, crushed wasabi peas and some pickled ginger on top for texture and flavour, this is a fresh and zingy recipe which will wake up your tastebuds.

Harissa Cauliflower Steak with Sundried Tomato Whipped Feta, Zingy Herb Dressing, Spiced Cauliflower Couscous and a Caper, Raisin and Pinenut Salsa

With this recipe you can feed a family of 4 for under £10. It’s full of flavour and texture and a delicious, satisfying veggie meal. The cauliflower “steaks” become beautifully soft, buttery and caramelised and absorb all the lovely flavours from my favourite rose harissa paste. The whipped feta is a complete game-changer and this recipe would work so well as part of any meat/fish/mezze spread.

Chicken Kyiv with Garlic Herb Butter and Minted Veg

Chicken kyiv may be a retro classic but I’d forgotten just how delicious and comforting they are. This was a birthday request meal from a few weeks ago and I discovered when coming up with the recipe that the secret to a great chicken kyiv is the butter - it really is a case of the more butter the better. It’s the type of meal I never make but it’s the perfect weeknight comforting dinner on these dark, wintry nights.

Yuzu Key Lime Pie with Ginger Nut Crust

I love the zesty sharpness of key lime pie at the end of a meal. Although you can’t beat this retro classic I decided to mix things up a bit with this recipe for my yuzu and lemon key lime pie with lemon and lime curd. The yuzu adds another layer of distinctive sharpness which goes so well with the ginger in the nut crust. This recipe can be made ahead and is perfect for your next dinner party.

Ultimate Pasta Ragu

This is one of my favourite recipes I have tested lately and one I will return to again and again. I wanted to come up with an ultimate pasta ragu recipe using lamb shoulder which falls apart, slow cooked in a rich sauce flavoured with anchovies, olives, capers, white wine, parmesan and plenty of herbs. Although decadent, by using white wine and chicken stock, this ragu is surprisingly light and not too heavy at all - meaning you can happily eat bowl after bowl (in fact I’d encourage this).

Spiced Salmon with Sumac Tabbouleh, Crispy Chickpeas and Tahini Dill Dressing

This recipe has bags of flavour, plenty of texture and is very healthy and quick to make. Pairing lemon and garlic tahini sauces with fish is a new discovery for me but one I am very much on board with. The spices on the salmon compliment the creaminess of the dressing, zestiness of the sumac tabbouleh and the crunch of the chickpeas.

Panfried Halibut with Pancetta Crumb, Cauliflower Puree, Wilted Spinach and Crispy Caper Vinaigrette

The key to this recipe is the caramelised cauliflower purée which pulls everything together. The saltiness from the pancetta crumb also works really well with the purée, as does the citrus hit and texture from the crispy caper vinaigrette. The star of the show however is undoubtedly the fish. Simply panfried in a little oil and some seasoning before being finished with some butter and lemon juice in the pan. I would always try and buy from my local fishmonger if I can, but I know this isn’t accessible for everyone, as long as what you’re buying is sustainable and works with your budget then it’s totally up to you.

Classic Linguine Vongole with Samphire and Crispy Parmesan Breadcrumbs

Any kind of seafood pasta is up there with my ultimate food heaven. I could just eat bowl after bowl. This is the recipe for my version of the classic linguine vongole. I think there are just some recipes which shouldn’t be messed around with and this is one of them. The combination of white wine, garlic, chilli and clams is just too good - I’ve added some crispy parmesan breadcrumbs for some added texture and some lovely samphire for added greenery and saltiness but ultimately I’ve stayed true to the original flavours.

Whipped Feta, Ricotta and Courgette Tart with Balsamic Roasted Tomatoes and a Basil Parmesan Dressing

It’s meals like this that make you don’t miss meat - the crispy puff pastry, salty and creamy whipped feta, the roasted tomatoes bursting with sweetness, and the sharp, herby dressing all work together so well. A satisfying vegetarian meal which won’t disappoint.

Peach, Fennel and Pistachio Cobbler with Lavender Creme Anglaise

I think cobblers are such underrated puddings - what’s not to love about sticky, syrupy fruit with a light and gooey sponge which soaks up all the fruit juices, a crispy topping and a creamy, rich custard on the side. I added fennel seeds because they go so well with peaches and the crunchy pistachios added more texture too. Adding some lavender to the vanilla custard is a complete game changer - it just gives a slightly floral hint which worked really well with the other flavours. Not the most refined of puddings, but definitely one of the tastiest.

Sunshine Paella

I decided to make this chicken, chorizo and prawn paella to bring some sunshine back into our lives during these cold winter nights. Full disclaimer - I know that chorizo is not in traditional Spanish paella recipes and is a very sensitive and contentious issue… However, I LOVE the flavour of chorizo in my paellas so couldn’t resist including it in my recipe! It gives such a nice smoky heat to the sauce which is just too yummy. Sometimes I find paellas too dry so my recipe is saucier than it should be traditionally but this is just how I prefer it.
