Baked Salmon with Super Green Orzo
One of my favourite midweek recipes that is full of green goodness. It’s also a great one for kids as they are getting plenty of veggies without realising. Plenty of basil, lemon and parmesan adds heaps of flavour, while a spoonful of creme fraiche helps make the sauce nice and creamy while still being very light and fresh. Delicious on its own but I like it with a simply baked salmon fillet on top. Would also work really well with chicken.
Curried Salmon Noodle Salad with Satay Dressing
This salmon noodle salad may be my new favourite salad recipe, purely because it doesn’t feel like you’re eating a salad but you’re still getting all the veggie goodness. It’s also one of those salads that actually taste better the day after, or after being dressed for a few hours so there are no soggy salad leaves woes here. The curried salmon fillets stay so moist but still have a slight crust by cooking them in the air fryer (you would also get the same result grilling them in the oven). A yummy peanut dressing made from peanut butter, soy, ginger, plenty of lime and some honey is so moreish and coats the vermicelli noodles so they become glossy and yummy. You won’t be able to stop sticking your fork in for more.
Baked Salmon with Pea Puree, Roasted Jersey Royals, Pickled Radishes and Feta
A super simple salmon supper filled with the freshness of spring flavours. Flaky salmon, salty feta, crispy potatoes, crunchy pea shoots, sweet peas and citrus radishes all work beautifully together.
Steamed, Miso & Honey Salmon
This is one of my favourite ways to cook salmon and it just so happens to be one of the easiest. The marinade couldn’t be simpler, just some miso, honey, soy, sesame, ginger and rice vinegar or lime juice. Steaming the fillets ensures they stay lovely and moist and really locks the flavour in. It also takes just a matter of minutes. Served with some brown or white rice, stir fried veg of your choice, and a selection of garnishes, this is one the quickest midweek meals.
Crispy Paprika Salmon with Sundried Tomato Yoghurt and Bulgur Wheat Salad
This crispy panko salmon is the perfect weeknight dinner, is super quick to throw together and is a great way to use up some stale sourdough you might have hanging around in the cupboard (or you can just use panko instead). The breadcrumbs are mixed with some spices, lemon zest and parsley to give a lovely crispy topping to the salmon which has a thin layer of dijon mustard across the top. Paired with a punchy sundried tomato yoghurt and fresh bulgur salad packed with plenty of fresh mint, peppers, tomatoes and cucumbers, this is a healthy dinner which will satisfy all tastebuds.
Tikka Baked Salmon with Red Lentil Dahl, Spiced Jammy Tomatoes, and Mango Chutney
This is one of my most favourite bowls of comfort food. You don’t even need the salmon on top, the recipe for the dahl and tomatoes are worth trying on their own with some naan and flatbreads but a piece of slightly charred salmon which is lovely and soft on the inside does go so well. It would also work really well with chicken. There are a lot of spices in the dahl but it just means you end up with maximum depth of flavour and if you double up the recipe it will last you all week and also freeze really well. A healthy, filling and flavoursome dish which will brighten up any rainy day and a bargain at just £2 per portion.
Mustard Crusted Prosciutto Salmon with Caramelised Shallots and Spinach Lentils
This is a quick, tasty and nutritious meal which I have returned to time and time again. I would make it at least once a week when I was a student and it just never fails to deliver. Low cost, accessible ingredients and delicious - it has everything I look for in a recipe.
Simple Salmon Supper
Sometimes you just need a simple dinner with minimal ingredients to get you through the midweek slump. This is the perfect dinner for when you’re short on time and energy. A lot of the ingredients you’ll have in the fridge already or can pick up easily on your way home. There are a few twists in the recipe to make it feel a bit more special than your typical salmon dinner (charring your lemon is such a simple step which really transforms the flavour and makes the dish feel that little bit fancy).
Harissa Baked Salmon with Pea, Feta and Mint Smash
This is one of my go-to meals for when I am short on time and need a healthy meal fast. The ingredients list is small and are all things which can be easily picked up on your way home or you will have them in your cupboard already. I cook this a lot, and by a lot I mean a lot, but whenever I have it I am surprised at just how tasty it is. Tasty, fresh, quick and easy, I hope this becomes a staple in your house like it has in mine.
Spiced Salmon with Sumac Tabbouleh, Crispy Chickpeas and Tahini Dill Dressing
This recipe has bags of flavour, plenty of texture and is very healthy and quick to make. Pairing lemon and garlic tahini sauces with fish is a new discovery for me but one I am very much on board with. The spices on the salmon compliment the creaminess of the dressing, zestiness of the sumac tabbouleh and the crunch of the chickpeas.
Cajun Spiced Salmon with Pea Guacamole, Black Bean and Chilli Quinoa and Citrus Red Cabbage
This is a healthy, vibrant and delicious salmon recipe which is packed full of plenty of nutritious vegetables. The pea guacamole is an absolute game changer and works really well with the cajun spices on the salmon. Full of colour and texture, it also makes great leftovers the next day.
Panfried Salmon with Beetroot Houmous and Apple, Fennel, Walnut & Dill Salad
I am a complete houmous obsessive and have found an alternative way to make my favourite dip. This beetroot houmous recipe is so tasty and versatile - you could have it with fish, chicken or as a dip as part of any vegetarian or meat mezze feast. It worked really well with this super fresh, crunchy salad and a salmon fillet for a tasty, quick, healthy, light dinner.
