Steamed, Miso & Honey Salmon
This is one of my favourite ways to cook salmon and it just so happens to be one of the easiest. The marinade couldn’t be simpler, just some miso, honey, soy, sesame, ginger and rice vinegar or lime juice. Steaming the fillets ensures they stay lovely and moist and really locks the flavour in. It also takes just a matter of minutes. Served with some brown or white rice, stir fried veg of your choice, and a selection of garnishes, this is one the quickest midweek meals.
(Serves 2 - £3.89 per portion)
1. First, make your marinade by mixing 2 tsps honey, 1 tsp honey, 1 tbsp soy, 1 tbsp mirin, 1 tsp sesame oil, 1 tsp of lime juice or rice wine vinegar and 1 tbsp finely grated ginger in a small bowl.
2. Pour this over the salmon fillets and leave to sit for 15 minutes at room temperature.
3. Place some lime slices in the bottom of a steamer basket, top with your salmon fillets and steam for 8-10 minutes until your fillets are just cooked through.
4. I served mine with some stir-fried asparagus tips and frozen peas which I cooked very quickly over a high heat in a wok with a little sesame oil and soy.
5. Serve with brown or white rice and garnish of your choice, I went for black and white sesame seeds, sliced red chilli, spring onion, coriander and lime.
