Harissa Baked Salmon with Pea, Feta and Mint Smash

This is one of my go-to meals for when I am short on time and need a healthy meal fast. The ingredients list is small and are all things which can be easily picked up on your way home or you will have them in your cupboard already. I cook this a lot, and by a lot I mean a lot, but whenever I have it I am surprised at just how tasty it is. I have priced it out using frozen salmon fillets, but you can use fresh salmon fillets of course (it will make it £3.20 per portion). Tasty, fresh, quick and easy, I hope this becomes a staple in your house like it has in mine.

(Serves 4 £2.26 per portion)

1. Put the salmon fillets skin side down in a parchment lined baking tray. Season then spread 1 tbsp of rose harissa paste over the top of each fillet (I always use Belazu) Add a knob of butter on top of each fillet and bake for 12-15 mins at 180C fan/200C.
2. Meanwhile make the pea and mint smash. Add 300g of thawed frozen peas to a food processor with a bunch of mint leaves, the juice of a lemon, 1 tbsp of toasted cumin seeds, a bunch of roughly chopped spring onions and 50g of natural yoghurt. Season and blend until the mixture is smooth but still has some texture.
3. When the salmon is cooked, spread some of the pea smash over each plate, top with the salmon and pour over some of the harissa butter from the roasting tray.
4. Sprinkle over some finely sliced spring onions, toasted flaked almonds and mint leaves and top with some crumbled feta cheese and chilli flakes.
