Paprika and Lemon Chicken with Smoky Hazelnut Romesco, Bulgur Kale, Charred Asparagus and Feta
This meal is on rotation for me at the moment. Marinading the chicken ahead in some paprika, garlic and lemon adds flavour and ensures it is super moist and tender. The smoky romesco sauce made using roasted red peppers and toasted hazelnuts is so moreish. More garlic, lemon, a splash of sherry vinegar and seasoning finishes it off so it’s both sweet, smoky and slightly sharp. Bulgur wheat cooked in chicken stock adds protein and with some steamed kale, some colour and extra goodness. I love any charred veg and asparagus works really well here. Some added parsley, feta and extra hazelnuts add texture, crunch and a wee salty hit.
Spring Vegetable, Mint, Feta and Ricotta Tart
This recipe celebrates all the good things about the spring/summer. It is also very, very quick to make, uses just a handful of ingredients and would make a lovely starter or light lunch. Crispy puff pastry with a creamy, salty and citrusy feta and ricotta mixture, crunchy asparagus and a drizzle of pesto completes the tart for a lovely veggie meal ready in no time.

Courgette, Herb & Halloumi Fritters with Tzatziki, Pistachio, & Pomegranate
If you need a little bit of inspiration for a meat free meal, why not give these courgette and halloumi fritters a go. Everyone loves a fritter, and with salty halloumi, warming spices, plenty of fresh herbs, lemon and garlic, these are really tasty and quick to whip up. Feta would also work really well. Some cooling mint tzatziki, fruity pomegranates and nutty toasted pistachios add more texture and flavour. These will become a staple in your house as they have in ours. They would also be a great addition to any big mezze spread.
Smoky & Spicy Chicken Sweet Potato Traybake with Feta and Chimichurri Dressing
This is a staple midweek meal for us. You can buy all the ingredients on your way home, it’s quick, easy and completely delicious. Smoky, spicy chicken thighs are roasted in a mixture of spices before adding sweet potatoes, peppers and tenderstem broccoli for sweetness, colour and texture. A fresh and herbaceous chimichurri adds a citrus zing while salty, creamy feta finishes everything off. You can use thighs with or without the bone if you’re short on time, but the bone does help them stay lovely and moist and tender. Plus, its all roasted in the same tray so washing up is minimal - ideal.

The flavours and textures here work really well together and the best part is, each component part can be made ahead which makes for easy entertaining when feeding a crowd. Just delicious.
Warm Roasted Butternut Squash, Beetroot and Lentil Salad with Balsamic Dressing, Feta and Mint
This is a very simple warm salad made with roasted butternut squash, beetroot and red onions. The puy lentils cooked with stock and bay leaves soak up all the lovely flavours of the balsamic, honey, mustard dressing and make it a filling substantial meal. To make sure there is as little waste as possible I also roasted the peelings from the squash and beetroot with some garlic granules and smoked paprika to add some texture to the finished salad. With some crumbled feta cheese to add a salty tang and some freshly chopped mint, this is the perfect midweek vegetarian meal.
Marinaded Lamb Leg Steaks with Pine Nut, Apricot and Olive Caper Salsa, Whipped Feta, Roasted Veg and Fluffy Flatbreads
This recipe is a winner. The spiced marinaded lamb leg steaks are so flavoursome and tender and when combined with the salty, creamy whipped feta, zingy pine nut salsa, sweet roasted veg, juicy roasted tomatoes and fluffy flatbreads, it is a dish full of texture and flavour which feels like a real treat. It is my favourite type of food which can be piled high on a big platter and put in the middle of the table for everyone to help themselves.
Aleppo Chilli, Prawn and Bulgur Wheat Salad with Spiced Courgettes, Feta and Lemon
This prawn bulgur wheat salad is healthy, delicious and great for leftovers the next day. It also comes out at under £4 per portion and is a great way to use up any veggies in your fridge. Its the prawns which make up most of the cost so if you would like to make it cheaper then you could use some cooked chicken or fried aubergine slices instead of the prawns which would be delicious. This is such a versatile dish which can be whipped up in no time.
Harissa Baked Salmon with Pea, Feta and Mint Smash
This is one of my go-to meals for when I am short on time and need a healthy meal fast. The ingredients list is small and are all things which can be easily picked up on your way home or you will have them in your cupboard already. I cook this a lot, and by a lot I mean a lot, but whenever I have it I am surprised at just how tasty it is. Tasty, fresh, quick and easy, I hope this becomes a staple in your house like it has in mine.

Harissa Cauliflower Steak with Sundried Tomato Whipped Feta, Zingy Herb Dressing, Spiced Cauliflower Couscous and a Caper, Raisin and Pinenut Salsa
With this recipe you can feed a family of 4 for under £10. It’s full of flavour and texture and a delicious, satisfying veggie meal. The cauliflower “steaks” become beautifully soft, buttery and caramelised and absorb all the lovely flavours from my favourite rose harissa paste. The whipped feta is a complete game-changer and this recipe would work so well as part of any meat/fish/mezze spread.
Whipped Feta, Ricotta and Courgette Tart with Balsamic Roasted Tomatoes and a Basil Parmesan Dressing
This was such a lovely and light dinner which would be ideal for a picnic or even as a starter for a dinner party if you made individual tarts. The combination of flavours were so fresh and tasty. It’s meals like this that make you don’t miss meat - the crispy puff pastry, salty and creamy whipped feta, the roasted tomatoes bursting with sweetness, and the sharp, herby dressing all work together so well. A satisfying vegetarian meal which won’t disappoint.
Za’atar Chicken Thighs with Watermelon and Feta Salad
A refreshing watermelon and feta salad with some mouth-wateringly succulent marinaded chicken thighs. I love the addition of fruit in salads, and the crisp, sweet juiciness of watermelon chunks with salty crumbled feta, kalamata olives and a light lemon, balsamic and honey dressing is hard to beat.
