Pork Peanut Noodles
This is such a tasty and comforting recipe. It doesn’t have too many ingredients and they are all easy to access. The peanut sauce is so moreish with lots of yummy soy, ginger and garlic. Crunchy roasted peanuts, sliced chilli and fresh lime all add more layers of flavour and texture. Pork mince is so underrated - it’s cheap, tasty and healthy and should be used more in my opinion.
Ultimate Chicken Satay
Everyone loves chicken satay and that’s because there is everything to love about this dish. Tender baked chicken thighs covered in a rich coconut peanut sauce with a slight hint of chilli heat, salty umami soy and zingy lime. A crunchy grilled topping and sweet honey glaze completes the dish while all you need to serve with it is some steamed basmati rice and sesame wok greens. Simple, but so effective and the perfect midweek meal to impress.
Chargrilled Rum Pineapple with Caramelised White Chocolate Coconut Ice Cream, Lime Syrup and Ginger Crumb
I love tropical flavours so couldn’t resist coming up with a dessert which just screams heaven on a plate. Pineapple, rum, coconut, lime - I’ve included all the good stuff in this one. The rum could be missed out for a kid-friendly version. This would be a great summer pudding to do on a bbq and all the different elements can be prepared beforehand so it is just a case of grilling the pineapple pieces to serve. All these flavours and textures just work so well together and I can see this becoming a family favourite from now on.
Ginger Sesame Chicken with Orange, Garlic and Peanut Broccoli, Brown Rice and a Soy, Lime and Coriander Dressing
This is a bowl which just feels like it’s nourishing you from the inside out with every mouthful. Full of fresh, clean flavours and lots of texture - it’s quick, tasty and healthy. The broccoli recipe is from Ottolenghi’s Simple and is one of my favourites - a must try. This is a staple dish in our kitchen and I hope it will become one of yours too.
