Slow Cooked Lamb Shank Madras Curry with Jeera Rice
I love a traditional Sunday roast, but sometimes, a comforting curry is just what you need to set you up for the week. This recipe will feed an army at a really low cost. Great for a dinner party and also ideal for freezing and keeping on hand whenever you’re in need of an emergency meal fast. I have priced this out to include the rice but not the naan breads which I’ll post as a separate recipe. Lamb shanks are such a good cut of meat - not only are they delicious, but they go such a long way and the bones add so much flavour. As with most rich meat dishes this also really benefits from a night in the fridge.
Spiced Halibut with Red Lentil Spinach Dahl, Mint Coriander Chutney & Crispy Chickpeas
This is one of my favourite recipes I have come up with in a while. The dahl is so moreish, you won’t be able to keep your spoon out of it and the key to getting a real depth of flavour is frying your onions for as long as you can (this is a game changer I promise). The subtle layering of spicing is so tasty and with some cooling yoghurt, zingy green chutney for freshness and the slight sweetness of mango chutney, every mouthful is a flavour sensation. Some crispy spiced chickpeas help add texture and with a lovely piece of marinaded fish on top, this is a recipe I hope you will come back to time and time again.
Spiced Prawn Tacos with Charred Kiwi, Mango and Black Bean Salsa, Avocado Smash and Crispy Paprika Corn (Copy)
These prawn tacos are full of vibrant, fresh, summery flavours to wake up your tastebuds. The spice mix on the prawns can be used on salmon, chicken, steak, sweet potatoes, anything you fancy. With some sharp and sweet pickled red onion, creamy avocado, fruity and spicy salsa and crunchy smoky corn, each mouthful is a flavour sensation. A lot of the elements can also be made ahead and would make a great Friday night meal if you’ve got friends round with the prawns to be made last minute. A special twist on your usual midweek tacos.
Indian Roast Chicken with Dal Makhani and Jammy Tomatoes
I haven’t posted a Sunday roast dinner recipe for a while and thought it was time to share a slightly different take on the traditional roast. The marinade on this chicken keeps it so lovely and moist, while the dal is just delicious, full of depth and flavour. This is the type of dish I could just eat and eat and eat. The tomatoes roasted with lemon, garlic and spices adds a burst of sweetness, while naan breads full to the brim of cardamom, spiced coconut and raisins are perfect to mop everything up.

Spiced Poppadom Crusted Chicken Wraps with Raita, Pickled Red Onions and Mango Salsa
I wanted to come up with a chicken wrap recipe which had all the flavours of a curry but had crunchy chicken breasts as it’s centrepiece. The chicken was so moreish - crunchy, slightly spicy and lovely and moist inside. With punchy mango salsa, cooling raita, sharp pickled onions, sweet chutney and fresh lettuce, these wraps are full of texture and flavour. They are also perfect for leftovers the next day (that’s if there will be any left). This would make a great Friday/Saturday night meal.

Roasted Spiced Cauliflower and Red Onion Salad with Chickpeas, Lemon Tahini Dressing and Pomegranates
I love a roasted salad and this one has some of my favourite flavour combinations. Salads don’t have to be boring, and this one certainly isn’t. For £1.67 a portion it’s also reasonably priced considering the amount of fresh ingredients. It’s a great Meat Free Monday meal if you’ve had an over indulgent weekend but doesn’t compromise on flavour and texture. It also just happens to be completely vegan.

Baharat and Orange Chicken Thighs with Saffron Jewelled Rice, Dukkah Roasted Carrots and Dill Tahini Yoghurt
This is one of my favourite recipes I’ve made recently and would make a great alternative to your Sunday roast. The flavours are also quite festive and Christmassy. The spiced chicken thighs with the sweetness of the orange and pomegranate glaze were so tasty and the rice was buttery and rich with saffron, nuts and dried fruits. The carrots were roasted in a mixture of spices and topped with pistachios, dukkah and fruity pomegranates. The creamy dill tahini yoghurt underneath really made the dish - this is definitely a side that could go with anything.
Spiced Lamb Chops with Mustard Seed Slaw and Chat Masala Potatoes
I love any kind of spiced marinaded lamb and after several tries, I think I might have found the perfect lamb marinade. If you can, do marinade the chops in the fridge overnight. It just helps the flavours to really sink into the meat and make it extra tender and juicy. Paired with a fresh and zingy slaw it is a marriage made in heaven.
