Rose Harissa Humous with Toasted Pine Nuts and Pomegranate
I could happily sit with a bowlful of this houmous and some pitta or flatbreads and demolish the whole thing. Making your own houmous is so easy and the difference in taste from the shop bought stuff shocks me every time. In this version I drizzle some rose harissa over the top before finishing with some pomegranates, mint and toasted pine nuts, but you can top it with whatever you like - crispy chickpeas, caramelised onions, chilli oil, pesto, feta cheese, spiced lamb mince, you name it.
Toasted Sourdough with Houmous, Za’atar Tomatoes, Capers, Pickled Shallots & Crispy Chickpeas
Inspired by a recent brunch at Urban Angel on Hanover Street in Edinburgh, this recipe has become a slight obsession. Perfect for brunch, lunch or a light dinner, it is a healthy dish full of texture and some of my favourite flavours. It’s also super easy to pull together last minute and chances are you will have most of the ingredients in your cupboard already.
Harissa Baked Chicken with Fridge Raid Bulgur Wheat Salad and Spiced Houmous
This recipe is quick, fresh and healthy and is also an ideal way to clear out your fridge of any veggies you might have lying around. It also just happens to be super tasty and has one of my favourite ingredients of all time - rose harissa. It’s very straightforward and you can put whatever you want in the bulgur wheat salad. This is my favourite way to cook chicken breasts. It’s all in the marination, leaving them at room temperature for at least 30 mins before frying, frying over a medium/low heat to develop a gentle crust and then baking at a lowish temperature so it stays nice and moist.
Panfried Salmon with Beetroot Houmous and Apple, Fennel, Walnut & Dill Salad
I am a complete houmous obsessive and have found an alternative way to make my favourite dip. This beetroot houmous recipe is so tasty and versatile - you could have it with fish, chicken or as a dip as part of any vegetarian or meat mezze feast. It worked really well with this super fresh, crunchy salad and a salmon fillet for a tasty, quick, healthy, light dinner.
Spiced Lamb Houmous with Feta, Pomegranate & Pine Nuts
This is the type of meal I could just eat and eat and eat. It’s also a great dish to serve at a dinner party in the middle of the table for everyone to get stuck into. I recommend serving with a zingy sumac tomato salad and some homemade garlic flatbreads to scoop everything up with.
