Soy, Tahini and Ginger Chicken Salad
A great salad recipe which will leave you feeling satisfied and nourished from the inside. It works great for leftovers and actually tastes better after a night in the fridge (soggy salads are no no in my book). The tahini, soy, honey, lime and ginger dressing is so moreish in this recipe and by poaching the chicken breasts first in an aromatic broth of ginger, spring onions and chicken stocks, before finishing off in a frying pan, you get lovely soft and succulent pieces of chicken which don’t dry out.
Leftover Lamb Noodle Stir Fry with Soy, Ginger and Sesame
If you have some leftover lamb after your Sunday roast, I’ve got the perfect recipe to try something different. This lamb stir fry uses store cupboard ingredients to make a delicious, easy and healthy dish which is ready in minutes. Using lamb in a stir fry is quite unusual but it works really well. Slow cooked shredded lamb seems to soak up the flavours from the sauce and become lovely and soft in no time. You can use whatever veggies you have lying around and some cooked stir fried rice stirred through at the end would also work really well.
Pork Peanut Noodles
This is such a tasty and comforting recipe. It doesn’t have too many ingredients and they are all easy to access. The peanut sauce is so moreish with lots of yummy soy, ginger and garlic. Crunchy roasted peanuts, sliced chilli and fresh lime all add more layers of flavour and texture. Pork mince is so underrated - it’s cheap, tasty and healthy and should be used more in my opinion.
Ultimate Chicken Satay
Everyone loves chicken satay and that’s because there is everything to love about this dish. Tender baked chicken thighs covered in a rich coconut peanut sauce with a slight hint of chilli heat, salty umami soy and zingy lime. A crunchy grilled topping and sweet honey glaze completes the dish while all you need to serve with it is some steamed basmati rice and sesame wok greens. Simple, but so effective and the perfect midweek meal to impress.
Prawn and Mango Quinoa Salad with Soy, Ginger and Chilli Dressing
This prawn quinoa salad is perfect for a light dinner, packed lunch or picnic salad. It’s zingy, crunchy and full of flavour. The dressing is so moreish you really could put it on anything. This would be great with chicken or salmon and you can throw in any veggies you’ve got lying around in your fridge. This really is my idea of sunshine in a bowl.

I love halibut. I have been wanting to try a recipe for my favourite fish which uses Asian flavours for a while now and after coming up with this recipe, I think it could become one of my favourite ways to cook the fish. I got the most beautiful pieces of chunky fish from David Lowrie Fish in St. Monans. I priced this recipe out using frozen cod fillets, but if you can, visit your local fishmonger for any firm, chunky white fish you can get. Fresh, flavoursome, fast food which feels super special - my favourite kind of meal.

Sprouts are still in season till the end of March and although we may all be slightly traumatised from the memories of sprouts which have been boiled to smithereens from our childhood, when cooked properly, these little green gems are full of flavour and add great texture to any meal. Seared Sesame Tuna with Pea, Avocado and Wasabi Mash, Pickled Ginger and Crispy Shallots
With this recipe I tried to recreate all my favourite flavours of a tuna and avocado sushi roll but in a slightly more refined, elegant dish. This made a lovely light main course but it would also make a great starter for a dinner party in smaller portions. The marinade for the steaks is sooooo tasty - salty, sweet, spicy, sour and sharp all at the same time with lots of deep umami flavours. The pea, avocado and wasabi mash works so well with the tuna, giving a background heat to the whole dish. With some crispy shallots, crushed wasabi peas and some pickled ginger on top for texture and flavour, this is a fresh and zingy recipe which will wake up your tastebuds.
Ginger Sesame Chicken with Orange, Garlic and Peanut Broccoli, Brown Rice and a Soy, Lime and Coriander Dressing
This is a bowl which just feels like it’s nourishing you from the inside out with every mouthful. Full of fresh, clean flavours and lots of texture - it’s quick, tasty and healthy. The broccoli recipe is from Ottolenghi’s Simple and is one of my favourites - a must try. This is a staple dish in our kitchen and I hope it will become one of yours too.
