Smoky Chipotle Beef Meatballs with Black Bean Salsa
This is a dish packed with flavour which definitely tastes better after a night in the fridge. The meatballs are rich and smoky with chipotle, cumin, allspice, cloves and cinnamon, while red wine, dark chocolate, rich beef stock, cinnamon and bay add more depth to the sauce. With some fluffy white rice, a refreshing and zingy lime, black bean and pepper salsa, a dollop of cooling sour cream and some creamy avocado slices all add more texture and layers of flavour. Pork and Ricotta Meatballs with Basil, Pea and Parmesan Orzo
Serving the meatballs with a green pea orzo is a little different from your usual tomato based sauces, so this is an ideal way to switch up your usual meatball recipes. The ricotta makes the meatballs so light and fluffy, while plenty of parmesan adds umami richness to the orzo which is full of colour, flavour and lots of basil. This is the sort of recipe which you immediately feel better after eating and at £2.32 per portion, it won’t break the bank either. It’s a comforting but healthy dinner full of goodness which adults and kids will both love.
Beef & Pork Ricotta Meatballs with Parmesan Polenta and Cavolo Nero
Meatballs of any kind will always be one of my favourite meals. Just sheer, unadulterated comfort which never fails to brighten a cold, miserable night. I make mine with high quality beef mince and pork sausage meat for extra flavour, while plenty of ricotta and parmesan cheese keeps them ridiculously light, fluffy but with a salty umami depth.
Lamb, Feta and Pistachio Meatballs with Tomato Sumac Salad and Za’atar Flatbreads
With this dish I tried to combine some of my favourite Middle Eastern flavours. These are up there with some of the best meatballs I’ve ever made - the crunch from the pistachios, saltiness from the feta, freshness from the herbs and sweet, sticky glaze from the pomegranate molasses made them completely moreish. With a refreshing tomato and olive sumac salad, bulgur wheat tabbouleh, tzatziki and homemade flatbreads to mop up all the deliciousness, this is my favourite type of food.
