Healthy Beef Chilli Bowls with Guacamole, Air Fried Tortilla Chips and Pico de Gallo
These beef chilli bowls are perfect to make on a Sunday night to serve you through the rest of the week. I sometimes make a double batch of the chilli which I can then freeze for emergencies (your future self will thank you). I make mine with lean beef mince, kidney beans and black beans for extra protein if I’m trying to be healthier. Red peppers add more veggie goodness and then a mixture of chilli powder, smoked paprika, oregano, cumin, coriander, garlic, and optional chipotle flakes for added smokiness all add more punch. I like to add some 70% dark chocolate, a splash of soy, worcestershire sauce and a spoonful of marmite for added richness.
Prawn and Mango Quinoa Salad with Soy, Ginger and Chilli Dressing
This prawn quinoa salad is perfect for a light dinner, packed lunch or picnic salad. It’s zingy, crunchy and full of flavour. The dressing is so moreish you really could put it on anything. This would be great with chicken or salmon and you can throw in any veggies you’ve got lying around in your fridge. This really is my idea of sunshine in a bowl.

This prawn bulgur wheat salad is healthy, delicious and great for leftovers the next day. It also comes out at under £4 per portion and is a great way to use up any veggies in your fridge. Its the prawns which make up most of the cost so if you would like to make it cheaper then you could use some cooked chicken or fried aubergine slices instead of the prawns which would be delicious. This is such a versatile dish which can be whipped up in no time.
Slow Cooked Chilli Con Carne with Chocolate, Ancho Chilli and Coffee
Not all chilli con carnes are created equally and this is one of the those chillies. The combination of the beef brisket and pork shoulder works so well together, while the chocolate and coffee add a real depth and richness. I love a slow cooked recipe I can shove in the oven and forget about, and the longer you leave this one, the better. It also always tastes so much better after it’s had a night in the fridge and the flavours have had a chance to develop, so if you can make it a day ahead.
