This meat free Monday meal is one of my absolute go-to’s when I’m low on energy and time. Having a packet of gyoza in the freezer is always handy when I need a quick and healthy meal fast. I like to pan fry them so they’re nice and crispy and golden and serve them with a saucy noodle stir fry packed full of plenty of veg and anything which needs using up in the fridge. Fast food at its best.

(Serves 2 - £2.89 per portion)

1. Mix 3 tbsps of soy sauce, 1 tbsp rice vinegar (optional), 1 tbsp honey, the zest and juice of a lime and 1 tsp sesame oil in a bowl.
2. Add 1/2 tsp sesame oil to a frying pan and fry the @itsuofficial veggie gyoza according to the packet instructions so they are nice and golden and crispy.
3. Cook noodles of your choice according to packet instructions.
4. Meanwhile heat a wok or large pan over a high heat and add 1/2 tsp sesame oil, the sliced white parts of half a bunch of spring onions along with 1 tbsp grated ginger and 2 crushed garlic cloves. Stir for a couple of mins before adding a sliced red pepper, some sugar snap peas, baby corn, a handful of beansprouts and any other veg you fancy. Stir for a few minutes until slightly charred.
5. Add your cooked noodles to the veg along with your sauce and turn the heat down. Add a handful of only chopped coriander. Toss everything together so it’s well coated in the sauce.
6. Serve in bowls with the crispy gyoza, a drizzle of extra soy, chilli oil if you have some, some sliced spring onions, a sprinkling of toasted sesame seeds and some extra lime and coriander.
