Grown Up Rocky Road

Inspired by Nigella Lawson’s Rocky Road Crunch Bars, this is my grownup version of rocky road - grown up thanks to a lil rum amongst lots of other goodies. I usually make a batch of these to take on shoots and they always go down well. I like to use a mixture of salted chocolate and also some orange chocolate too but you can use whatever you like. Ginger nut biscuits and stem ginger add another layer of flavour, while crunchy salted peanuts add a delicious salty hit amongst the sweetness. With some chopped crunchie bars you also get some yummy bites of honeycomb without going to the effort of making your own. Marshmallows and some deliciously plump fruity raisins soaked in rum add more texture and almost make the bars more tiffin-like. Ridiculously easy and so so moreish - if you take these to the office or just keep them in the fridge at home for whenever you need a sweet treat, you will be everyone’s friend I promise.

12 large squares or 24 small squares (84p per square if cutting into 12 and 42p per square if cutting into 24)

1. Gently melt 300g dark chocolate (at least 70% cocoa solids) in a large saucepan with 125g unsalted butter and 3 tbsps @tateandlylesugars golden syrup. I used 100g of @lindtuk orange, 100g Lindt 70% and 100g Lindt dark chocolate with sea salt but you can use whatever mix you want.).
2. Place 150g ginger nut biscuits in a freezer bag and crush with a rolling pin so you have a mixture of fine breadcrumbs and larger pieces.
3. Once the chocolate mixture is melted add the crushed biscuits, a large handful of roughly chopped roasted salted peanuts, 100g mini marshmallows (because it wouldn’t be rocky road without marshmallows), 2 roughly chopped @cadburyuk crunchie bars, and 3 balls of stem ginger with a splash of the syrup. I also like to add 70g of raisins soaked in a little rum or amaretto (hence the “grownup” rocky road).
4. Stir this all together then pour in a parchment lined baking tray. Press down with a spatula then refrigerate for at least 6 hours or overnight until set.
5. Dust with a little icing sugar before cutting into squares and enjoy!
