Fridge Raid Tuna Quinoa Salad with Harissa, Mangetout and Walnuts

This was a salad made out of desperation but will become one I turn to again and again. Often we open the fridge at lunchtime and are faced with what seems like nothing inspiring, but with some quinoa, a few store cupboard ingredients and whatever else you have lying around you can make a delicious lunch in no time. It is also cheaper than your typical supermarket meal deal. This really doesn’t need a recipe, its more a case of throwing in whatever you fancy, but here is what I did to make this salad. It would also be great with some crumbled feta cheese over the top if you happen to have some in your fridge.

(Serves 2 - £2.67 per portion)

  1. First cook 80g quinoa in 400ml vegetable or chicken stock for about 8-10 mins until cooked through. Drain and leave to steam.

  2. Add 1 tbsp rose harissa to the cooked quinoa and stir. Add the juice of a lemon, some seasoning and stir through.

  3. Next add a drained can of tuna along with a chopped red pepper, some rocket, steamed roughly chopped mangetout, finely sliced spring onions, some deseeded chopped tomatoes and chopped coriander. At this stage you can add whatever you have lying around in the fridge so go wild.

  4. Top with some roughly chopped toasted walnuts (or whatever nuts you have) and more coriander leaves.
